What do you eat for breakfast on LCHF? This is one of the most common questions from beginners, and even experienced LCHF eaters sometimes want new inspiration.
Bacon and eggs, leftover from dinner or intermittent fasting in all its glory, variety is good too. And now it's time for variety!
We here at Diet Doctor have invited Fanny Lindkvist, who has a popular Swedish blog and Instagram account (over 10,000 followers). She is a nutritionist and a recipe creator and over the coming weeks she'll share ten of her best breakfast ideas. Here's the first.
Guest post and breakfast idea #1
Who is Fanny?
I have always loved food and everything that has to do with it. Grocery shopping, cooking, hosting, looking for a special ingredient, picking mushrooms - anything is possible. In our family album, I am the little girl with her arms deeply buried in a bowl, or with food around my mouth.Today I work with food professionally. Partly as a food inspirer with my recipes on lesscarbs.se, partly as a licensed nutritionist in LCHF and paleo. I always wanted to work with food, but not as a chef. Therefore, I became the world's happiest when, in the summer of 2014, I started my Instagram account and quickly discovered that others liked my food. This was the beginning of my food career.
My recipes are clean and simple. By that I mean that there aren't so many ingredients and I emphasize their natural flavors. The food is fresh and I use a lot of vegetables. A lot of people beginning to eat LCHF hunt carbohydrates and avoid a lot of good stuff, like vegetables - unnecessarily. My food is healthful without sacrificing either taste or variety.
Why LCHF?
Four years ago, after I gave birth to our son, I was 66 lbs (30 kg) heavier and felt that I wanted to try this LCHF that so many talked about. Fairly quickly I lost all my pregnancy weight. But the real revelation was that my inflammatory symptoms were gone. I used to suffer from IBS and "incurable" eczema (according to numerous doctors), but thanks to my new diet all these problems disappeared. It felt both wonderful and strange at the same time. Could it be so simple that food was my medicine? In my work as a nutrition counselor, I help my clients to adjust their diet to improve their health. The impact of food on health is not to be underestimated, and that you also get enjoyment along the way is just a big bonus. I love helping people become the best versions of themselves in a natural way.

Tuna Salad with Capers
I've always loved tuna salad. It's especially good with capers.
Ingredients
2 servings1 can of tunafish in water
½ cup (1 dl) mayonnaise ( A Very Simple Basic Recipe for LCHF Mayonnaise)
2 tablespoons sour cream
1 tablespoon capers
1-2 inches (3-5 cm) finely chopped leek
Pepper, salt and chili flakes to tasteInstructions
Let the tuna drain. Mix together all ingredients, season with salt and pepper or chili flakes. Ready! Serve with boiled eggs and LCHF sesame crispbread.
Idea! You can also chop eggs directly into the salad and add hot chili sauce. You can also replace sour cream with mayonnaise for a dairy-free option or replace capers with olives or gherkins.
