What do you eat for breakfast on LCHF? Here's idea number seven from Fanny Lindkvist, who runs a popular Swedish blog and the Instagram account LessCarbs.
Ginger and Licorice Granola
Ingredients (6-8 servings)
1 egg white
4¼ oz (120 g) chopped almonds
¾ oz (20 g) peeled sesame seeds
1¾ oz (50 g) lightly salted butter
2 oz (70 g) dry, unsweetened coconut flakes
2-3 teaspoons licorice powder
2-3 teaspoons dried ginger
A pinch of saltInstructions
Set oven to 300°F (150°C).
Whip the egg white fluffy. Mix in the dry ingredients and the chopped almonds.
Work the butter with your fingers until the texture is smooth and the dough is a single clump.
Spread the granola in the pan in chunks and place in oven for 15-20 minutes.
Carefully turn every three minutes. The nuts should be crispy without burning the clusters. It will take 15-20 minutes. Store in the fridge in a tightly sealed container (sealed because there's fat in the granola, and it will keep better).
