Karlyachi Bhaji (Bharli Karli) | Bitter-Gourd Vegetable

Karlyachi Bhaji / Karela Sabzi / Bharwan Karela/ Stuffed Karela / Bitter Gourd Vegetable , lot of name to this Sabzi. There are lot of versions of this Bhaji , made in Punjab, South, Maharashtra, and all around in the world. I have made Karlyachi Bhaji in typical Maharashtrian style with peanut masala. This vegetable tastes very nice with little sweet and little spicy masala with its own bitter taste of Karela.

500 gms Karela/Bitter gourd
3-4 tbsp Peanuts
3-4 tsp. White sesame seeds
1/4 cup Dry coconut
2 tsp. Red chili powder
2 tsp. Goda masala

1 tsp. Turmeric powder
1 small piece of Jaggery
4 tbsp cooking oil
1 tsp. Mustard seeds
5-6 Curry leaves
Salt to taste

1.Wash and cut Karela into big slices as looking into photos. Then , give vertical cut at one side and remove all seeds from inside. Keep these slices side.


2.Roast peanuts on to a hot tawa. Peel them and then grind into powder. Grate dry coconut and then roast it on tawa. Grind it too.


3.Mix Jaggery, white sesame seeds, ground dry coconut, roasted peanut powder, red chili powder, goda masala, turmeric powder and salt in a bowl and make a mixture.


4.Fill this mixture inside the karela slices and make it tight with fingers only , so that mixture does not get loosen in pan.(you could add little oil to this masala mixture so it will get stick to karela easily)


5.Heat oil. Add mustard seeds. When they start crackling, add curry leaves. Cook for a moment. Add stuffed karela and put cover on the pan. Make sure flame should be on slow because karelas may get burn. Give a little stir after 7-8 min and again cook for more 10 minutes.
