How to Make Thai Iced Milk Tea

Thai iced milk tea is one of my favorite drink that I will order whenever I am dining in a Thai restaurant. Cha Yen known as Thai iced milk tea is a very popular drink in Thailand. Thai drink made from strongly brewed ceylon tea with added yellow food colouring for that distinct bright orange color. In my recent trip to Bangkok, I had bought Thai Tea Mix tea bags known as Cha Dra Muer (Number One Brand) at one of the shops that sell Thai snacks and goodies in MBK shopping center. They also have green tea flavours as well. You can also get the Number One Brand tea leaves at Golden Mile level 2 Thai supermarket as well. The price is much cheaper as compare to Singapore major supermarkets. I am also currently exploring using Thai milk tea flavours in my bakes as well.

In Bangkok, you will see many vendors selling Thai iced milk tea on streets, mobile motorbike drink carts , small shops in selected BTS station and restaurants. They even have a Cha Dra Muer stall selling freshly made Thai iced milk tea served in Cha Dra Muer tall red capped cup.

Whats make a good cup of Thai iced milk tea? Strong distinct tea flavor with smooth texture and creamy rich taste of milk.

Ingredients
  • 1 tablespoon or 1 bag Thai black tea
  • 1 cup of hot boiling water
  • 2 teaspoons sweetened condensed milk
  • 2 teaspoons evaporated milk (plus 2 teaspoons additional to sprinkle on top)
  • 2 teaspoons sugar
  • 1 cup of crushed ice

Methods:

  1. Pour 1 cup of boiling water to steep the tea bag and extract the flavor in a mug. Steep the tea for a few minutes until it turns dark in color.
  2. Add 2 teaspoons of sugar, 2 teaspoons of sweetened condensed milk to the mug and give it a good stir.
  3. Then add 2 teaspoons of evaporated milk, and continue to stir the tea till it is fully well mixed.
  4. Optional – A good Thai iced milk tea should have a little froth or some bubbles on top. Holding a clean steel cup with tea in one hand, pour tea into a mug in another. Repeat the process a few times until tea is frothy. Try to pull it from as high as possible, allowing it to mix thoroughly.
  5. Fill the glass with crushed ice.
  6. Slowly pour the hot tea mixture over the cup of crushed ice.
  7. To give the Thai iced tea a final creamy texture, drizzle on some more evaporated milk onto the top of your cup.
