- 1 1/2 pounds sliced Eggplant
- 2 tbsp olive Oil
- 1/2 cup chopped Onion
- 16 ounces sliced Mushrooms
- 9 lasagna Noodles
- 16 ounces spaghetti sauce with vegetables
- 8 ounces ricotta cheese
- 4 ounces shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp vegetable oil
How to make Eggplant Lasagna
Step 1: Heat vegetable oil in a skillet, then add eggplant slices and quickly brown them. Keep aside. Step 2: Heat olive oil in a skillet, then add onion and cook until they are tender. Step 3: Add mushrooms and cook until mushrooms are tender while stirring frequently. Step 4: Meanwhile, cook lasagna noodles in boiling salted water according to package directions. Step 5: In a baking dish, add sauce, then arrange three alternate layers of lasagna noodles, ricotta, mushroom mixture, mozzarella cheese, eggplant slices, sauce and Parmesan cheese.
