Ingredients

    • 1 can Chipotle chiles in adobo sauce
    • 1 tbsp Butter
    • 1/2 cup chopped Onion
    • 1/2 cup chopped green bell Pepper
    • 1 minced Garlic clove
    • 2 tbsp all-purpose Flour
    • 1 can diced Tomatoes and green Chiles
    • 4 cups hot cooked elbow Macaroni
    • 2 cups shredded Cheddar Cheese
    • 1 cup cottage Cheese
    • 1 cup Milk
    • 1/4 cup grated Parmesan Cheese
    • 1 beaten Egg
    • 3 tbsp dry Breadcrumbs

How to make Chipotle Mac & Cheese

Step 1: In a pan, melt butter then add chopped chiles, onion, bell pepper, and garlic. poon pasta mixture into a 2-quart baking dish coated with cooking spray; Step 2: Cook them until onion is tender while stirring continuosly. Step 3: Add flour, then again stir it well. Step 4: Add tomato and cook until thickened. Step 5: Add 1 tsp reserved adobo sauce, pasta, cheddar cheese, cottage cheese, milk, Parmesan, and egg, then stir well. Step 6: Transfer this pasta mixture into the greased baking dish, then top with breadcrumbs. Step 7: Bake it in a preheated oven until bubbly. Step 8: Serve hot chiptole macroni and cheese.
