Recipe of Chicken Enchiladas
Versatile chicken enchildas recipe is excellent as it can be made with little leftover beef or chicken. Baked corn tortilla are filled with onion, chicken, green chillies, cumin, cheese, garlic and topped with green onions, and sour cream. Also you can substitute beef in place of chicken in this enchildas recipe which is given here as under.

Ingredients
- 1 tbsp Butter
- 2 chopped medium Onions
- 1/4 tsp paste of Garlic
- 1 cup Chicken broth
- 1 cup Milk
- 5 chopped green Chilies
- 1/4 teaspoon ground Cumin
- 12 corn Tortillas
- 1-1/2 cups shredded cooked Chicken
- 1 cup shredded cheddar Cheese
- 2 thinly sliced green Onions
- Sour cream
- Salt to taste
Step 1: Heat the butter in a saucepan, then add garlic and onion.
Step 2: Afterwards add chicken broth, milk, chillies, salt and cumin.
Step 3: Cook this mixture for five minutes while stirring it continuously.
