Todays post is of a different sort, it is a recipe! Yay. Any way it is for delicious butterfly cakes, my mom made some at the weekend and I thought I could share that with you.
So first you want to make a basic sponge mix.Ingredients:180g Butter (room temp)180g Sugar3 Eggs150g Self Raising Flour30g Coco Powder
Method:Set oven to 180 degrees c.Combine the butter and the sugar and mix them really well.Add in the eggs one by one, mixing well in between each egg. Pour in the flour and coco powder and fold in. Voila that is your cake mix. Now you just want to spoon them into cake cases filling 2/3s full. It should make about 12 ish. Take out your cakes after 15 minutes baking. If you stick a knife in it should come out clean.
While they are cooling you need to make the butter cream icing. You need half the amount of butter to icing sugar, I usually just guess this but I begin by using 50g butter to 100g icing sugar to make it chocolate I add 15g of coco powder. I also add a splash of milk if it doesn't seem like the right consistency.
When the cakes are completely cold you want to scoop out the middle of each cake. Keep the scooping whole as you will need to cut them in half to use as the butterfly wings. In the hole add in some butter cream and then place your wings on top. And that's it! Easy.
