I love baking. Making bread, muffins, cakes, cookies - anything!

Before going on vacation in Italy I have made this easy and super tasty honey oat bread. As most breads, it require double raising time, so make sure you have got sometimes if you want to make it.

Here is the recipe!

Ingredients (one loaf, 9×5″ pan):

  • 3 cups all-purpose flour
  • 3/4 cup oats (instant or old fashioned both work fine)
  • 2-1/4 tsp instant yeast
  • 1-1/2 tsp salt
  • 1 cup whole fat milk (soy or almond can do as well if you are intolerant)
  • 1/4 cup lukewarm water
  • 2 tbsp unsalted butter
  • 1/4 cup honey, warmed
  • 1-1/2 to 2 tbsp oats

In a large bowl combine flour, salt and oats

In a separate bowl warm the milk so that it's warm enough to melt the butter (but not boiling). Add the butter and let it melt.

In a small bowl place yeast with 1 tsp of sugar. Pour in the water and let it stand until it become all foamy.

Pour the milk and yeast mixture into the flour and mix until it just come together to form the dough.

Move the dough onto your kitchen counter and knead for 10 minutes until the dough it's smooth and elastic. If still very wet and sticky add 1 tbsp of flour and knead for 5 min. If dough is too dry, add 1 tsp of water at a time.

Place the dough in a lightly greased bowl, cover with plastic wrap and let it rest for 2 hours or until doubled in size

When doubled in size roll out the dough on a lightly floured surface into a 9*12 inch rectangle

Tightly roll the dough and place it into a 9*5 loaf pan. Cover with plastic wrap and let it rest for 1 to 1-1/2 hours.

It should double in size again

Brush the top of the loaf with warmed honey, sprinkle with the oats and bake at 180 C for about 40-50 min or until the surface is golden brown.

Let it cool down on a wire rack before slicing it up!
