This is one of the best healthy side dish I have made in a LONG time. It's super easy, tasty and incredibly light.
The grilled vegetable can be served as a salad, a side or also used in sandwiches!
Here in China we are getting ready for another big holiday, 8 days for the Golden Week which celebrates the anniversary of the Party in PRC. I will be flying to Thailand to see my best friend and enjoy some good food, nice weather and sunshine! I will try to post another recipe before I take off!
As for today, let's grill!
Ingredients:
- 3 to 4 tablespoons olive oil
- salt
- 1 large sweet potato
- 1 large zucchini squash, sliced
- 1 large yellow squash,sliced
- 1/4 cup feta cheese crumbles
- 1/4 cup of Greek olives
- fresh basil leaves
- 1/2 lemon
Cook the sweet potato in boiling water until tender when poked with a fork. Slice it up when cool enough to handle
Wash the zucchini and squash
Slice up the zucchini and squash and brush with some olive oil
Pre-heat your grill pan, and grill all the vegetables
and sweet potatoes., about 3 min on each side or until grill marks appear.
slice up some Greek olives
then grab some feta cheese
Transferred grilled vegetables on serving plate, add Greek olives, season with salt, olive oil and a squeeze of lemon juice, then crumble some feta cheese, add some fresh basil
and serve!
