Green Tea (matcha) Lava Cake

I have always wanted to bake matcha lava cake. Looking through the recipe at the internet and realised that is not too difficult to bake. I had eaten my first green tea lava cake at Together Café and thought why not try baking these at home. I can pair the matcha lava cake with fruits or even ice cream… Oh yes, not forgetting a cup of nice hot tea. Here come the recipes:

Ingredients:

60g white chocolate

40g unsalted butter, softened.

40g sugar

1 egg

8g matcha powder

25g flour

Methods:

1.Butter two ramekins and dust with some flour (especially the bottom part of the ramekin)

2. Simmer a pot of water and put the bowl of white chocolate on top of the pot (double-boil method). Mix well until chocolate is fully melted.

3. Add softened butter into melted white chocolate and mix well to incorporate.

4. Mix in the sugar

5. Beat in the egg

6. Sift in the flour and matcha powder. Mix well until no visible lumps

7. Pour into prepared ramekins, cling-wrap surface of ramekin and put into the freezer for at least 30 minutes (so that the outside gets cooked faster than the insides)

8. Preheat oven to 230 degree Celsius

9. Bake in preheated oven for 9 minutes.

10. Leave cake in the ramekin for 10 minutes to cool. Use a spatula/knife to run the sides of the cake so that it no longer sticks to the bowl. Gently flip the ramekin onto another plate so that the cake falls off nicely.

I had used aluminum cups instead of ramekins to bake the matcha lava cake. I had obtained the matcha lava cake recipe from Vickii Ma blog. Her matcha lava cake look so awesome!

Observations:

When I had tried to mix in the sugar (step 4) to the melted white chocolate and butter, the sugar turn lumpy and it is quite hard to dissolve the sugars. Adding the egg seems to help and hence I had continued to add in the flour.

I had baked chocolate fondant cake before and the mixture is considered runny. However for the matcha lava cake mixture, it is more viscous as compared to the chocolate fondant. Most of the matcha lava cake recipes are quite similar to the one posted on Ms Vickii’s blog.

The taste of the matcha lava cake is good. There is no bitter after taste of the matcha. It goes well with fresh fruits like strawberry and blueberry. However the lava is not as runny as expected.

Since I do have the ingredients, will try another method using the same ingredients soon.
