My mom used to make Gajarchi Koshimbir, every alternate day,mostly in winter because carrots are freshly available in winter season of India and I loved it.Its a one of the carrot salad in maharashtrian style,As you all know carrots are always helpful for our healthy diet,in this koshimbir/salad, we don't cook carrot , we used it as raw.So this dish becomes more nutritious and simple to make.
Ingredients:
2 carrots, grated
2 Tbsp roasted peanut powder
2 tsp lemon juice
1 tsp sugar
1 small tomato, chopped
2 green chillies
salt ,as per taste
coriander leavse,for garnishing
for tadka:1 tsp ghee/butter
1/2 tsp hing/asafetida
1/2 tsp cumin seeds
1/2 tsp mustard seeds
Method 1 :
Mix grated carrot,roasted peanut powder,lemon juice together in bowl.Add sugar,salt and chopped green chillies and tomatoes.Mix it well and garnish it with coriander leaves.
This is very simple method without tadka.
Method 2 (with Tadka)
Follow above method and heat ghee in small pan.Once it is hot, put hing,cumin seeds and mustard seeds in ghee.Turn off the switch immediately,don't burn the tadka.Pour the tadka on koshimbit and mix it well.
