Fast/ Vrat/ Upvas Wale Aaloo

Main Ingredient: potato,crushed Coriander Seeds and cumin

serves: 4

ingredients:

  • 4-5 large size boiled potatoes (aaloo)
  • 2 tablespoon clarified butter (ghee)
  • 1 teaspoon cumin seeds (jeera)
  • 1 teaspoon Roasted Cumin powder (bhuna jeera)
  • 1 tablespoon roasted, crushed coriander seeds (Dhaniya powder)
  • Red chilli powder to taste (optional)
  • 1-2 teaspoon green chilli chopped (optional)
  • 1/4 teaspoon black pepper powder (optional)
  • 1/4 teaspoon turmeric powder(haldi)
  • 2 tablespoon lime juice or 1 teaspoon green mango powder (optional)
  • Rock salt (sendha namak)
  • finely chopped cilantro (hara Dhaniya)

Preparation: 

  • Wash the potatoes thoroughly. Pressure cook in a vessel over water for 2 whistles.
  • Make sure that potatoes are cooked but not overcooked. Remove and peel the potatoes.
  • Cut the potatoes into dice pieces. Keep aside. 

Method:

  1. In a heavy bottom broad pan heat the ghee.
  2. Add cumin seeds and when it starts crackling add the green chilli, crushed coriander seeds and potatoes and Stir fry it.
  3. Add all dry ingredients cumin powder,turmeric, salt, black pepper and lime juice or green mango powder and mix well...
  4. Add the few drops of water to mix well and cook for 2 minutes.
  5. garnish with cilantro and Serve hot.
