
Fast/ Vrat/ Upvas Wale Aaloo

- 4-5 large size boiled potatoes (aaloo)
- 2 tablespoon clarified butter (ghee)
- 1 teaspoon cumin seeds (jeera)
- 1 teaspoon Roasted Cumin powder (bhuna jeera)
- 1 tablespoon roasted, crushed coriander seeds (Dhaniya powder)
- Red chilli powder to taste (optional)
- 1-2 teaspoon green chilli chopped (optional)
- 1/4 teaspoon black pepper powder (optional)
- 1/4 teaspoon turmeric powder(haldi)
- 2 tablespoon lime juice or 1 teaspoon green mango powder (optional)
- Rock salt (sendha namak)
- finely chopped cilantro (hara Dhaniya)
Preparation:
- Wash the potatoes thoroughly. Pressure cook in a vessel over water for 2 whistles.
- Make sure that potatoes are cooked but not overcooked. Remove and peel the potatoes.
- Cut the potatoes into dice pieces. Keep aside.
Method:
- In a heavy bottom broad pan heat the ghee.
- Add cumin seeds and when it starts crackling add the green chilli, crushed coriander seeds and potatoes and Stir fry it.
- Add all dry ingredients cumin powder,turmeric, salt, black pepper and lime juice or green mango powder and mix well...
- Add the few drops of water to mix well and cook for 2 minutes.
- garnish with cilantro and Serve hot.
