In my childhood, I was not fan of dudhi bhopla bhaji.But I used like Dudhi Bhopla Halwa.Now after marriage, I have to cook vegetables and each time when I do grocery, I have ignored it or sometimes just wasted.But finally I learned how to cook and how it can be delicious in its own way.We can say it as "Bottle Gourd vegetable".
Dudhi Bhoplyachi Bhaji/Bottle Gourd Vegetable
Ingredients:
1 medium sized bottle gourd,
4 green chilies,
1 tsp fresh grated ginger,
1/4 cup soaked chana dal,
1/2 tsp asafoetida,
1 tsp mustard seeds,
1 tsp cumin seeds,
2 tbsp oil,
coriander leaves Method: 1.Peel outer green skin of gourd and cut into vertical halves.Remove seed part.Cut into small squares.
2.Heat oil and add mustard seeds.When they splutter add curry leaves, asafoetida,green chillies and cumin seeds. 3.Add turmeric powder and grated ginger. 4.Add pre-soaked chana dal into oil and fry the dal for few minutes till it turns little golden brown. 5.Add gourd/bhopla into pan and cover the pan for 10 minutes till gourd has become soft. 6.Add salt as per taste and garnish with coriander. Serve with hot roti and pickle.

Method 2:
This bhaji can be made in gravy form in similar fashion, only 2 steps needs to change as follows: 1.Add peanut roasted and grinded into little powder form,instead of chana dal. 2.Add water for gravy consistency. Serve with hot roti or rice.
