Doodhi/Lauki Ki Kheer

Ingredients:
- 2 cups grated bottle gourd (Doodhi / Lauki)
- 1 tablespoon clarified butter (ghee)
- Sugar to taste
- ½ cup condense milk
- 4 tablespoon desiccated coconut (nariyal bura)
- 500 ml milk
- 1/4 teaspoon cardamom powder
- 1/4 cup sliced dry fruits (almonds, Raisins, Cashews, Pistachio)
Preparation:
- Squeeze grated bottle gourd/Lauki to remove water.
Method 1:
- Heat ghee in frying pan on medium high heat as it melts, add the bottle gourd and stir-fry for about 4-5 minutes.
- Add milk, condense milk, and cover and cook on a simmer for 5-10 minutes until the milk is creamy and make sure you stir the kheer often to ensure the milk does not burn in the bottom of the pan.
- Reduce the heat to medium and add the sugar, coconut powder, dry fruits and cardamom powder.
- Cook for another about 2-3 minutes and turn off the heat.
- Kheer is ready this can be served warm, at room temperature or cold.
Method 2 :
- Combine the bottle gourd, condense milk, coconut and milk in a pan and simmer for 10 to 15 minutes till the bottle gourd is cooked.
- Add the sugar, cardamom powder and dry fruits mix well and cook till the sugar dissolves.
- Kheer is ready this can be served warm, at room temperature or chilled.
