My mom organized a birthday party for one of her friends a few weeks ago. Well, those plans fell through aka everyone bailed, but I was still game!
It was a lovely evening of eating and eating and eating. What can I say? It's what we do. My dad is a fabulous cook (you too mom) and he had a delicious Caribbean meal in the works. Yeah, I'm cultured. When I asked what I should bring, his response (through my mom, through Facebook) was "something coconut). Ooooook.
Out came these bars. They are delightfully tangy and full of flavor. And gosh, oh so creamy. I kept seeing my dad go back and cut a little more off the next square in the pan. I call that a win. This recipe can easily be doubled for a big crowd.
