I'm a big fan of the afternoon snack. That little break while I'm at work is something I look forward to every day. Even if I'm not too hungry, I'll eat a little snack around 3 or 4 because if I don't, I'll get hungry early and want to devour all the things when I get home.
When I'm in training mode, like I am currently, snacks become all the more important. When I'm running more, I'm burning more calories and therefore need to consume more calories to keep my body and muscles going.
A lot of times I'll opt for an apple and almonds or one of these snack options, but one of my favorite things to make is my own energy bars.
When I created these Copycat Chocolate Coffee RX Bars a few months ago, I got a bunch of requests to create other flavors. Blueberry was one of the most requested. Well, friends, the recipe is finally here! Copycat Blueberry RX Bars at your service!
These babies are filled with wholesome ingredients, such as almonds, cashews, egg white protein and dried blueberries, but the key to making it all come together is medjool dates.
Natural Delights medjool dates are larger than other types of dates. They're picked at just at the right time, so they're incredibly soft and sweet. They're also what make all of the ingredients in these bars stick together.
The raw nuts load these bars up with healthy fats, iron, magnesium and vitamin B6. The egg whites add protein, and the medjool dates give these babies a healthy dose of fiber and potassium. In fact, medjool dates have 50% more potassium by weight than bananas! All those good things make these bars a great recovery snack after a long run or tough workout, or ya know, when you get hangry at 4pm.
I used Natural Delights Pitted Medjool Dates to save a little bit of time, but ones with pits will work just as nicely if you don't mind removing the pits yourself.
