For a special get-together I went to on Saturday, I brought these yummy Cinnamon Candied Pecans for everyone to snack on. They were a huge hit! I found the recipe, by Claire Gosse, in the December 2011 issue of VegNews Magazine. I am definitely making these again. I’m thinking they would make an excellent Christmas gift.
Cinnamon Candied Pecans
Makes 4 cups
1 1/2 tsp. ground chia seeds
2 tbsp. water
1 tbsp. vanilla
1/2 cup sugar
1/2 cup brown sugar
3/4 tsp. salt
3/4 tsp. ground cinnamon
1 lb. pecan halves
~ Peheat oven to 250 degrees. Line a baking sheet with parchment paper and set aside.
~ In a large bowl, whisk together the chia seeds, water and vanilla. In a medium bowl, mix together both sugars, salt and cinnamon. Add the pecans to the chia mixture and toss to coat the pecans thoroughly.
~ Transfer the pecans to the sugar mixture and toss to coat. Spread the pecans onto the baking sheet. Bake for 1 hour, stirring every 15 minutes. Cool completely before serving. Store in airtight container.
Next time I think I might up the cinnamon to 1 tsp. and take out my pecans a bit sooner since my oven runs hot.
