Hands up, who's excited for Christmas?! I AM, I AM, I AM! And to get myself in the mood, last week I attempted to recreate one of Millie's Cookies amazing Christmas themed cookies. And, it's not exactly as amazing as Millies, but they're close. They certainly taste like Christmas!
Ingredients
125g butter
100g light brown sugar
225g flour
125g caster sugar
1 egg
1 tsp vanilla extract
1 tsp baking soda
1 tsp ground ginger
2 tsp cinnamon
4 tbsp golden syrup (I used honey flavoured)
200g chocolate chips (I used 100g white and 100g milk chocolate)
Method
1) Preheat oven to 180 °C/Gas mark 4
2) Cream butter and sugars and then combine egg and vanilla
3) Shift in flour, baking soda, chocolate chips, syrup, cinnamon and ginger
4) Spoon tablespoon sized balls onto a tray lined with greaseproof paper
5) Bake for 7 minutes for a doughy result, or 10 if you want them cruncher
6) Leave to cool on a wire cooling rack. Then EAT!
