What better way to indulge someone than making some dark chocolatey cupcakes with even more indulgent ganache as topping??
After a long spell of exams ,it was time to indulge my daughter with these superlative cup cakes! These are dark and chocolatey with a moist crumb and a lovely creamy glossy ganache on top.
Adapted from Martha Stewarts recipe
Cupcakes
- 1/2 cup cocoa powder
- 1 cup flour
- 1 cup sugar
- 1 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1 large egg
- 1/2 cup milk
- 2 tablespoons oil
- 1 teaspoon pure vanilla extract
- Ganache
- 120gms or 4 oz Dark chocolate
- 1/2 cup heavy cream
Preheat oven to 180 C .Line a muffin pan of 12 with liners. Sift cocoa, flour, baking soda, baking powder, into the bowl of a mixer. Beat on low speed until just combined.Add Sugar. Raise speed to medium, and add eggs, milk,oil and vanilla. Beat until smooth, about 3 minutes. Divide batter among baking cups, filling each about two-thirds full. Bake until tops spring back when touched with a finger, 18 to 20 minutes. Let it cool completely. Dip the cupcakes in ganache 2-3 times ,dry between the coats.
Ganache Coarsely chop chocolate. Bring cream just to a boil over medium heat. Pour over chocolate . Let it stand for 10 minutes . Stir with a whisk until smooth and shiny to break up any pieces and emulsify cream and chocolate.
