I have said this before, and I will not get tired repeating it: comfort food is the best!
Fancy food is pretty, comfort food is hearty and good.
I am sure you guys all agree with me here, don't you?
Here is an easy recipe for making turkey meatloaf. The extra kick comes from using chipotle to glaze it, which will give the meat that slight chili flavor and extra moisture.
Here is the recipe!
Ingredients
- 500 gr ground dark turkey meat
- 1 slice of whole wheat bread, torn into pieces
- 1/2 small red onion, minced (about 1/4 cup)
- 2 tbsp chopped fresh cilantro
- 1 whole small egg
- 1 tsp Worcestershire sauce
- 1 tsp minced chipotle chilies
- 1 tsp adobo sauce
- salt and ground pepper
- 1/4 cup ketchup
Preheat oven to 180 C.
Chop up the onion very small
Wash and chop some fresh cilantro.
In a large bowl combine meat, bread, onion, cilantro, egg, Worcestershire, adobo sauce, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
Mix all the ingredients together
Transfer mixture to a nonstick loaf pan. Stir together chilies and ketchup; brush onto top of loaf.
Bake for about 40-45 min.
Let the meatloaf cool down a bit before slicing it.
Serve with a side of mashed potatoes and more fresh cilantro.
This is also great heated up the day after:)
