Caramelized Apricots with Ricotta and Pistachios

Hey guys! Sorry for the long break. It has been 3 weeks since my last post, reason is I was HOME, yes in Italy, enjoying some sunshine, beach, sea and super tasty food with my family and friends. I had a blast and enjoyed every second of it.

Back in Shanghai, I've been welcomed by 38 C with 80%, that feels like 45 C! I am melting!!! The only place I can be is in the pool, where I'm now going every day to train, since that's the only workout possible with such temperature!

As you guys know well by now, when it's so hot I try to stay away from the stove or oven. Though we still need to feed ourselves so here is an easy and fresh recipe for dessert or also as a healthy breakfast!

Ingredients:

  • 4 large apricots (halved and pitted)
  • 1 tbsp. sugar
  • 8 tsp. fresh ricotta cheese
  • 2 tbsp. crushed pistachios

Wash the apricots

Cut them in half and remove the internal pit

Dip the cut apricots into the sugar

Broil them into a 300 C oven until they are caramelized and juicy (3 to 4 min). Let them cool down.

In a mortar place the pistachios and slightly crush them

In a bowl cream with a spoon the ricotta ( click here to make your own ricotta)

Top the apricots with 1 tsp. of ricotta cheese and the crushed pistachios
