In Butter Lettuce, Chicken and Cherry Salad, croutons add texture and flavor to it, when fried in chicken fat. With numerous ingredients, the salad is a worthy meal and healthy as well. And, it will be a great use of leftover chicken with a kick of cherry in it. If you are looking for healthy salad or on the diet, then you can leave croutons. Butter Lettuce, Chicken, and Cherry Salad - Non-Vegetarian Serving: 4 Preparation Time: 30 mins Cooking Time: 30 mins

Ingredients

    • 1/4 cup Lemon juice
    • 3 tbsp Dijon mustard
    • 3 tbsp chopped Dill
    • 2 tbsp Honey
    • 1 minced Garlic clove
    • 1/4 cup extra-virgin olive Oil
    • Kosher Salt to taste
    • Ground black Pepper to taste
    • 4 Perfect Pan-Roasted Chicken Thighs
    • 4 crusts removed and torned slices rustic Bread
    • 1 pound stemmed, pitted, and lightly crushed Cherries
    • 3 cored and torned heads butter Lettuce
    • 4 sliced Radishes
    • 1 tbsp chopped Chives

How to make Butter Lettuce, Chicken, and Cherry Salad

Step 1: In a bowl, whisk lemon juice, mustard, dill, honey, garlic and oil, then season with salt and pepper. Step 2: Remove chicken skin, then take out chicken meat and cut into the pieces while discard bones. Step 3: In a skillet, heat chicken fat, then add bread and toast until golden and crisp. Step 4: Remove from the skillet, then drain on paper towels and season with salt and pepper. Step 5: In a bowl, place chicken meat and toss in cherries, butter lettuce, radishes, chives and vinaigrette to coat. Step 6: Garnish the salad with croutons and chicken skin, and serve.
