Basic Sponge Cake -With Cherries and Cashew Nuts

I have already made Basic sponge cake, But my son keeps asking for more cakes. So I have to be very innovative and make different cakes for his snack and lunch boxes. So, this time I made Basic Sponge Cake with Cherry and Cashew Nuts and it turned out very nice.

My Son usually don't eat cashews and I have to put them in the Rice dish or make cashew powder and put into his porridge. But, with this cake he just ate lot of cashews and Mommy Mission was successful !!!

Sometimes we just need to eat simple cake as a snack and for kids, we don't want to go for icing, cream and any decorations. So, this Basic Sponge Cake with Cherry and Cashew Nuts is really simple and great idea for snack.

Basic Sponge Cake -With Cherries and Cashew Nuts


1 cup refined flour/Maida

a few drops of vanilla essence

1.Preheat oven at 180 C.


2.Break eggs in bowl and add vanilla essence.Beat well with an electric beater for 8-10 minutes or till ribbon stage.


3.In another bowl, take butter and sugar. Beat them with electric beater at low speed for 3-4 minutes or till it becomes fluffy.


4.Add flour into creamed mixture through strainer, so it will uniformly fall in bowl. Add beaten egg mixture also.


5.Mix well by cut and fold method. Do not use electric beater , as we do not want the fluffiness should go.


6.Add milk and mix it well. Add Cherries and Cashew Nuts for crunchiness in your cake.(You can add any nuts like walnuts, almonds or raisins of your choice)


7.Pour the mixture in greased aluminum cake tin ,dusted with all purpose flour from all sides.


8.Put cake tin in preheated oven and bake for 20 minutes. Check with toothpick ,if it comes clean ,then your cake is done. If it does not , put it more 5 minutes. It will make 8 -inch cake.


9.Once done, cool down cake for 10-15 minutes and cut the cake.
