Baked Salmon and Mediterranean Style vegetable
You guys know I prefer fish over meat. That's always been the case and I think it will never change. Here in Shanghai salmon is one of the easiest and more convenient type of fish to find and I like to cook it in many different ways. This recipe is very simple and quick to make, perfect for an easy meal solution after a long day at the office.

Here is the recipe!

Ingredients (serves 2):

  • 2 filets of fresh salmon, skin on (about 250 gr each)
  • 2 sardines in oil
  • 2 cups of fresh green beans
  • 2 tbsp. pitted black olives
  • 1/2 lemon
  • 2 tbsp. extra virgin olive oil
  • 1 cup cherry tomatoes
  • 1/2 cup fresh basil leaves
  • salt and pepper
for the basil aioli:
  • 1 bunch of fresh basil
  • 2 cloves of garlic
  • salt and pepper
  • 1/2 cup mayonnaise
  • 1/2 lemon juice

Wash the green peas, bring a pot of water to a boil and bleach them for 5 min. Drain and move them into a bowl.

Wash the basil and tomatoes. Cut the tomatoes in halves.

Pitt the olives

Place basil, tomatoes and olives in a large, season with salt, pepper and olive oil. Add the green beans

Season your salmon with salt and pepper

Brush a baking pan with olive oil and place the salmon skin up.

Add the veggies on the side. and lay pieces of sardines on top of the veggies.

Bake for 10-15 min at 200 C

Meanwhile prepare the aioli. Grab a bunch of fresh basil, wash it an dry it off.

Take 2 cloves of garlic, sprinkle them with salt and mince them to make a paste. Add them to the basil

then add the mayo, lemon juice salt and pepper

and blend everything until you get a smooth cream

When the salmon is cooked and vegetables are lightly crispy, remove them from the oven

Plate the salmon with the Mediterranean veggies on the side and scoop one tbsp of the basil aioli on top of each fillet.
