Bunch of Green Giant Asparagus Spears

One of our favorite side dishes is Asparagus and Mushrooms. We both enjoy it and we can have a lot for very few points. This entire side dish is 2 Weight Watchers PointsPlus points. Split between the two of us it’s a one point serving.Ingredients

Land O Lakes Light Butter  

1 bunch of asparagus
1 package of sliced mushrooms
2 tablespoons of Land O Lakes Light Butter = 2 Weight Watchers Points Plus Points  
Salt and Pepper to taste

Sauté Sliced Mushrooms


In a medium sized pan sauté the whole package of sliced mushrooms with 1 tablespoon of Land O Lakes Light Butter over medium heat.

Cleaned Asparagus Spears

While the mushrooms are cooking snap the dry stem ends off of each asparagus. Place in a colander and rinse the asparagus. Then pat it dry.

Sauté Asparagus


When the mushrooms are cooked scrape them into a bowl and set them aside. Then sauté the asparagus, in the same pan, with the remaining tablespoon of Land O Lakes Light Butter over medium to high heat. Season with salt and pepper. You should cook the asparagus to your desired doneness. For us it takes about 10 minutes. Pour the mushrooms back in to warm them back up and then place the asparagus and mushrooms on a plate.   
   *Sometimes we grate fresh parmesan on top. It’s good but it adds points.

This dish goes well with roasted chicken or a nice pot roast. It’s very filling and it’s a great serving of vegetables.
