With all the recent craze about Castella cakes or you may also called it as Egg Sponge cakes, I got to try one and that is Ah Mah’s Traditional Homemade Egg Sponge Cakes or in Chinese it’s called “阿嬷老字號古早味現烤雞蛋糕”. Here in Vivocity, it just opened last week I decided to give a try to see if it really it’s worth going nuts about it.
Pricing for Original is $8 while the Cheese is going for $11. Original is plain just the cake only while Cheese has cheese fillings.
While queueing, there were other patrons in front of me buying both the Original and Cheese so there really is no preferred flavour for these cakes. Seems both are equally good, I decided to buy both the flavours.Just nice, there is a rule stating only “2 boxes per customer” but it’s okay, I’m just getting 2 boxes so there is nothing to worry about.
I went there at about 10.15am in the morning and the queue was not really that long and while waiting, I managed to see the process of baking these cakes – the pastry chef pouring out the batter, laying the cheese, putting it into the oven, flipping the cake high up in the air (to remove the baking paper and mind you, the cake looks heavy to flip it the normal way), cutting the cakes into equal sizes (they actually used a ruler to measure precisely for the cuts!
Now no one can complain who’s cake bigger or smaller!) and packing them carefully into the boxes nicely laid out on the counter. What I saw was a positive team of people working diligently on the cakes.
Not forgetting the aroma of the freshly baked cakes coming from the ovens. Orders were taken systematically such that the guy who took order asked an aunty if she’s in the right queue order (aunty came all the way to the front because she had to make way for another lady who came forward to make payment for her cake which was the last one from the current batch).
Original cakes are stamped with the “Ah Mah” logo on it while the other with specks of cheese on top is the Cheese flavour. Okay now the cakes are bought, let’s try it out while it’s still fresh! The box covers are left open upon purchase. This is to prevent the egg sponge cakes from getting soggy due to the cake still being in the process of cooling down as heat is still emitting from the freshly baked cakes straight from the hot oven.
The Original cakes are very soft and fluffy. It’s not too sweet and it’s egg sponge cake fragrant. This means that there isn’t any “eggy” taste over-powering the cake taste. The top baked just right and it’s not burnt. The Cheese cakes tastes the same as the Original only it has a little salty taste coming from the melted cheese in the middle layer of the cake. It’s sweet and savoury.
Each box of cake comes with a disposable knife so you can cut and share with your family and friends. On the side of the cake box has instructions of how to store your leftover cake as well as consumption period. These cakes are indeed good as a gift to anyone and I’m sure they won’t be disappointed, given the quality of these sponge cakes.
Why do I say that? That’s because in my opinion, Ah Mah’s Traditional Homemade Egg Sponge Cakes really is delicious. It’s fragrant, soft and fluffy. The Cheese option is for those people who prefer “some spice in your life” and won’t settle for “plain old routine one”. Whichever the cake is, it serves very well for tea-breaks when everyone get together to refuel their soul with good sponge cakes from Ah Mah’s Traditional Homemade Egg Sponge Cakes.
