You guys! This is the LAST DAY of my Paleo challenge! I can't believe the month is already over. I'll be posting a full results post soon, but I will tell you that it's been pretty good overall. I am, however, pretty excited to have a glass of wine this week. I don't know what it says about me that the first thing I want after this whole month of cutting things out is wine, butttttt yea... that glass of vino is going to be glorious.

Anywho, while one challenge comes to an end another begins. I'm officially back into race training mode. My next race is the Syracuse Half in early April, and I'm already ramping up the miles again post Dopey Challenge.

I usually have a big bowl of oatmeal before long runs and a big smoothie with Vega or Plant Fusion protein powder post long run, but this Paleo challenge means I've had to come up with alternate forms of fuel for the past few weeks. This Paleo Egg & Hash dish is pretty great for pre-run, and my new recovery meal has been this Paleo Coconut Green Smoothie!

Paleo Coconut Green Smoothie

This baby is filled with nutrients and healthy fats. It gets its green powers from spinach and avocado and just the right amount of natural sweetness from a little banana and coconut water.

I usually use almond milk in my smoothies, but when I got to try Amy & Brian Naturals coconut water, I knew that this would have to be in my next smoothie concoction.

One, it's Paleo-approved, and two, coconut water is loaded with electrolytes that help the body hydrate and recover.

I've had coconut water before, but what is nice about Amy & Brian Naturals is that it's a family run business. They source their coconut water from young green Thai coconuts, which have a natural sweetness without any added sugar (win!). They also have a bunch of really interesting flavors that I've never seen before for coconut water. There is original (my favorite), original with pulp, lime, grape and cinnamon.

I used the original flavor in this Paleo Coconut Green Smoothie, and it makes it smoothie so refreshing, especially after a long run. All the healthy fats make it incredibly filling, as well.
