I am not a big sandwich eater. I enjoy many kinds of foods, and I usually feel the wrap or breads just mask whatever you put in between - not mention the added calories. Besides, if I find a really good, crusty bread, I'd prefer it warmed up with a bit a high quality extra virgin olive oil instead.
Having said that, I stumbled across these wraps in a small health food market in Margate, NJ, a beach town just down the boardwalk from Atlantic City.
These raw, vegan, gluten-free wraps are made from coconut so if you are not a fan of this nutty fruit, stop reading. The taste is undeniable.
I tried them in two ways. The first was to stuff a wrap with shredded lettuces and lentils with a little lemon juice and seasoning. It was ok...not te best combo.
Then I tried another with peanut butter and jelly - and there you have it! A sweet, slightly crackly, paper deserves something else sweet and a little sticky, so this worked. This is definitely not an everyday food for me now, but I'd also try it with peanut butter and banana and maybe a little agave. Even a drizzle of vegan chocolate sauce couldn't hurt! A friend of mine told me she loves these at Passover, for those of you needing a matzah alternative. If you try them, let me know your thoughts!
