One bowl is a blessing.Always, especially if you are at the mercy of two cantankerous maids who are threatening to take a holiday on the same day.Diem horribilem!So totally ,so we do Carpe Diem and bake -messing up as less as possible.Seize the day ,with apples and whole wheat flour.And in a mad moment,top the cake with an oat crumble.Mad and so bl***y healthy...it makes me wonder at myself...
Whole Wheat Apple Cinnamon Cake with Oat CrumbleA loaf tin and two muffins for company. My error of judgement,chopping the apples into medium sized dices . When someone chops and peels for you ,you usually bend and grin,cursing them silently. So advice- grate the apple or chop in very very small dices.reason-when you slice the cake the bigger apple pieces ruin the look of the slice.Whole Wheat Apple Cinnamon Cake with Oat CrumbleEasy -Peasy, it took me 2 minutes to whisk and I used a spatula,not a whisk. you may omit the egg, I added the egg because this was whole wheat, to sort of complete the proteins .The oats were an after thought and tasted yum and crisp.Imagine this...A soft slice of apple cake topped with a crisp crumble.Yumm.

Whole Wheat Apple Cinnamon Cake with Oat Crumble...
you need
1 cup whole wheat flour1 cup plain flour3 apples peeled,cored and chopped3/4 cup sugar-I ground mine in the mixer1/2 cup vegetable oil3/4 cup yogurt1 tsp ground cinnamon(I grind my cinnamon with sugar ,so I added 2 tsp )1 tsp baking powder1/2 tsp baking soda1 egg(optional)1 tsp vinegar
for the oat crumble1 tbsp soft butter2 tsp oats2 tsp sugar
Grease and flour a loaf tin and line a couple of stand alone muffin cups.Heat your oven to 180C.In a large bowl add the apple, yogurt,oil ,egg and the sugar powder. Pop the flours, baking powder and baking soda and powdered sugar with the cinnamon powder. stir and add a pinch of salt.Stir to break lumps. If you grate the apple ,you can avoid the egg or reduce the oil and make it lower in fat. Almost like an uncooked apple sauce cake.
Whole Wheat Apple Cinnamon Cake with Oat CrumbleIn a small bowl mix the oats, sugar and the butter .Pour the cake batter into the loaf tin and the stand alone muffin cases and sprinkle the oat mix on top.Bake in the the oven for 35 -40 minutes. you will need to take the muffins out after about 25 minutes...not a great thing to do...but...whatever floats the boat???

This cake was an awesome snake-read healthy for sweet child and other growing up kids.

The cake is light and not dense,unlike most egg less whole wheat cakes.
