I was recently sent some of the new Corned Beef products from Princes and challenged to cook up a delicious meal for the family in around 20 minutes.
The new products include Corned Beef with Onion, Chilli and Mustard.
Corned Beef is never something I have really cooked with before. Big Mr A likes to have it in a sandwich but it had never occurred to me to do anything more with it.
I have come up with (and tried out!) two recipes with the new Corned Beef products. Both have been tested on the whole family and I can confirm that they both went down very well and we had empty plates all round!
Corned Beef Plait
First up I made a Corned Beef Plait with the Corned Beef with Onion. It was incredibly quick and simple to make as I used ready made pastry. I would normally make my own pastry but was feeling too lazy!
Ingredients:
Ready made shortcrust or puff pastry Corned Beef with Onion Tomato Purree Half an onion dicedMethod:
1. Roll out the ready made pastry and spread with a good helping of tomato puree.
2. Cut up the Corned Beef into chunks and lay out in the middle of the pastry.
3. Cover the Corned Beef with the diced onion.
4. Make slits in each side of the pastry and plait over the top of the Corned Beef and Onion.
5. Bake in a pre-heated oven at 180 for around 20 minutes until the pastry is brown and the filling hot.
Corned Beef Big Breakfast Bake
Next up I decided to make a breakfast, all in one bake, using the Corned Beef with mustard. Although it took longer to cook than 20 minutes because of the potatoes, I have included it as it is really easy to make and if you wanted you could pre cook the potatoes to make it quicker to cook at teatime. I wasn’t sure how this would turn out but can confirm it was delicious!
Ingredients:
4-6 medium potatoes cubed Corned Beef with Mustard 4 eggs (or more if you wish!) Tin of baked beans BaconMethod:
1. Place the cubed potatoes into a hot baking dish and cook in a pre-heated oven at 200 for 25 minutes, turning half way through.
2. Add bacon to dish and cook for a further 10 minutes.
3. Crack the eggs into the dish and bake for 5 more minutes.
4. Finally add the Corned Beef and beans to the top and cook for a further 5-7 minutes until they are hot.
After realising how easy it is to create a dish with Corned Beef I will certainly consider it for more meals in the future.
