Waldorf Astoria Fresh Pea Soup

This is a great recipe for a cold winter day or when you are having a cold. For some reason I only have soup on cold days or when I am actually feeling down. This healthy lunch ideas soup actually does taste like Waldorf Astoria Fresh Pea Soup. Now if you have tried the real thing than you would know what i am talking about if not Than you need to try the original thing first than you have to make this at home which is 10 times more better. Anyways I will leave you to it whether you make it at home or have it in some fancy restaurant I hope you enjoy it. Ingredients:

  • 2 pounds fresh pea pods shucked
  • which should yield 1-1/2 cups fresh peas
  • 2 1/2 tablespoons butter
  • 1/2 onion, diced
  • 3 cups water
  • salt and pepper to taste
  • 2 tablespoons extra virgin olive oil
  • juice of one lemon
Directions:
  1. Shuck peas and reserve the pods.
  2. Bring 3 cups of salted water to a boil and cook peas for 1 minute.
  3. Strain peas, reserving water and place peas in ice water.
  4. In a two quart sauce pan, melt 1 tablespoon butter and gently cook onion until translucent.
  5. Add the pods, pea cooking liquid and salt and pepper.
  6. Simmer for two minutes.
  7. Strain liquid into a blender.
  8. Add cooked peas and puree.
  9. Add 1 tablespoon butter and 2 tablespoons olive oil, salt, pepper and lemon juice and blend.
  10. Serve immediately, or chill and reheat when ready to serve.
