Instant dosai are my saviors many a times.These kind of dished come to my rescue when I don't have normal dosai batter in hand and also not in a position to cook elaborate dinner.Vendhaya dosai is a kind of instant dosai prepared in Tamil homes,it is a very soft and tasty dosai with prominant flavor of methi.Some people may not like the slight bitterness of methi seeds but I absolutely love this.With just 2 hours of soaking time you can prepare these yummy dosai for dinner/breakfast.
Vendhaya dosai recipe
Star ingredients:Par boiled rice and methi seeds
Time:2 hours+30 minutes
Yield:18-20
Ingredients:
1 3/4 cup par boiled rice(Puzhungal arisi or idly arisi)
1/4 raw rice(pacharisi)
1/4 cup whole urad dal
3 teaspoons methi seeds
Salt
Method:
1.Soak all the ingredients together for 2-3 hours.
2.Drain and grind to a smooth batter,The consistency should be like the one for normal dosai(free flowing)
3.Heat a non stick or cast iron tava,spread a ladle full of batter from inside to outside.
4.Apply little oil and cook from sides till done.Serve hot.
Notes:
1.These dosas taste best when made spongy.
2.You can choose to use par boiled rice completely instead of raw rice.
