I have tasted vegetable cutlets in restaurants only twice or thrice.I never used to like the greasy almost black outer layer of those cutlets but the filling was way way delicious.Since Few years back I got a recipe for cutlet in one Tamil magazine,it sounded so very simple that I was suspicious whether it would turn good.I just gave a shot as I had all ingredients handy and the recipe was really simple.But to my surprise cutlets turned out damn good,the same taste and flavor as I ate in restaurants minus the grease and dark outer layer :). I don't like deep frying the cutlets,shallow frying them is more than enough and that way they are not only delicious and healthy too.This is a great finger food for toddlers/kids those who are fussy about eating veggies.Try this no onion garlic vegan recipe and find yourself wanting more
Vegetable cutlet recipe
Star ingredients:Veggies
Time:30 minutes
Yield:10
Ingredients:
2 large potatoes
1 large carrot
6-8 tender beans
1/4 cup green peas
1/2 cup bread crumbs
2 teaspoons corn flour mixed with 1/4 cup water
1 teaspoon chilli powder
1/2 teaspoon turmeric powder
1/2 teaspoon pepper powder
1 teaspoon chaat masala powder
1/2 teaspoon amchur(dry mango)
Salt
Oil for shallow frying
Method:
1.Pressure cook all the vegetables with 1 cup water for up to 4 whistles.Drain the water and peel carrots and potatoes.
2.Now mash all the veggies very well with out any lumps.Add all the dry spice powders and salt.Mix well and form a tight dough.
3.Pinch a big lemon sized ball from it and flatten with your palm.Dip it in the corn flour mixture and roll over the bread crumbs
4.Shallow fry in hot oil until golden from both sides.Serve hot.
Notes:
1.If preferred you can deep fry the cutlets,but trust me shallow fried ones are far better.
2.You can add crushed ginger to the veggies if needed.
3.If you find it difficult to make ball from the veggies,probably you have not drianed all the water,you can add 1/8 cup of bread crumbs to the mixture and roll again.
4.Be very gentle while shallow frying,they tend to break easily
