Vegan Summer Recipes - Cocktails Included!

I must admit I am not in the habit of reading magazines unless I'm on a beach or an airplane (though I do subscribe to a fabulous, dishy celebrity email rag!) but this month's issue of Men's Fitness magazine had some awesome recipes - and a few were vegan - so I couldn't help but to share!
You must know by now I love guacamole and am partial to the one my son and I make with fresh line and kosher salt. Next time I make it, I might use these ingredients:
2 avocadosJuice of 2 limes1 tsp sea salt2 pinches black pepper1 tomato, diced (I'd remove the seeds too)1/2 cup cilantro, chopped1/4 habanero pepper, seeds removed and finely diced 
I also love hummus. If I were on a dessert island with guacamole, hummus and peanut butter I'd be fine. This hummus recipe has an interesting twist - sunflower sees butter in place of tahini!
1 cup chickpeas, drained2 TBSP extra virgin olive oil1 TBSP sunflower seed butter1 TBSP like juice1 tsp sea salt
I am SO making that soon...
And how about a watermelon margarita? Yes, I do love tequila almost as much as the other three foods I mentioned above, but I promise I have it more sparingly!
Combine 1/2 cup tequila, 5 TBSP agave nectar, 4 cups seedless watermelon, diced and 1 cup crushed ice. Blend, serve and sip!
If you prefer rum (not my beverage of choice,) blend 1/2 cup lemon flavored rum, 1/4 cup frozen blueberries, juice of 1/2 lemon, 2 TBSP agave nectar, 1/2 cup club soda, 5 leaves fresh mint and 1/2 cup crushed ice.
