As I have mentioned in the last post Shree jayanthi (Krishna jayanthi ) is celebrated for two days.Actually in my home (MIL's) it was yesterday and it is today in our mom's home.So I am posting special recipes for two consecutive days here :)Yesterday it was festival lunch spread and today I have for you two special recipes just prepared for Krishna jayanthi.Here I have given the easiest method my mom follows for the recipes.Try out and let me know :)
Uppu seedais are small deep fried savory balls prepared out of rice flour with few other ingredients.This dish has a big reputation for bursting once dropped into the hot oil.But with few caution measures we can easily avoid bursting and prepare yummy seedais.Of course we get to master this through some experience too.Now lets move in to the recipeUppu seedai recipeStar ingredient-Rice flourTime:15+30+15 minutesYield:50-60 small seedaisIngredients: 1 cup rice flour2 teaspoons urad dal1/4 cup all purpose flour (optional)25 grams unsalted butter2 teaspoon white sesame seedsSaltOil for deep fryingMethod:1.Heat a pan and dry roast urad dal till slightly brown.Set aside to cool.In the same pan saute the rice flour till fragrant.Once urad dal is cool,grind it to a powder.
2.Tie the all purpose flour in a clean cloth and heat in cooker for 10 minutes (As shown in the picture). Remove from heat and spread to dry. 3.Sieve all the flours together and mix well.4.Add sesame seeds and salt to the flour mixture and add the butter.Mix well till you get a greasy crumbled dough.5.Add just enough water and form a pliable soft dough.do not add too much water.6.Make small balls,smaller than cherry tomatoes and arrange in a plate.Let it rest for 30-45 minutes until the moisture is gone.7.Heat oil for deep frying.Once the oil is thoroughly hot deep fry the seedais in batches.Cool to room temperature and store.Notes:1.The main reason for seedai to burst is the moisture content.Seedai will burst if you fry when they are still wet2.Next important point is if you dry them for long time seedais will end up having cracks.So just dry for not more than 45 minutes for the above given quantity.3.Addition of all purpose flour is just to ensure crunchiness.It is purely optional.4.If the quantity of butter is less seedai will turn out hard from inside,if more seedais will break while frying5.Deep fry in medium high to ensure proper cooking.
