Triple Layer Chocolates

Not as polished as I'd hope but never the less I am very proud of how these little treats turned out :-)

I used 3 basic couveture chocolates to make these, white, milk and 85% dark. The white I infused with vanilla to really highlight the flavor and the dark I added some espresso. I didn't want to add new flavours too much to these chocolates as I wanted to just emphasize their
natural flavours and let them shine :-) These are designed to be simple, elegant and delicious.

The flavor is spot on, however I do want to work on my technique for really refining my chocolates and making them look stunning. I think I need to take more time to ensure a clean finish and neat lines.

But overall I am chuffed with these little beauties :-)
