Tomato Soup #Inafriday

It is Ina Friday and as always it seems I am behind.

This month it is all about Soups Sides and Salads. I decided to make soup.  This is a great soup to make this time of year. Especially when we all still have tons of ripe tomatoes and have had your fill of tomato salads and such. I have lots of leftover tomatoes from my garden I was planning on making some marinade or vodka sauce. I still have plenty for that. I just wanted something fresh to enjoy. This is so good with a grilled cheese. Life cant get any better than this.

Fresh Tomato Soup

Ingredients:

1 tablespoon olive oil

1 1.2 cups chopped red onions

2 carrots chopped

1 tablespoon minced garlic

4 pounds vine ripened tomatoes coarsely chopped

1 1/2 teaspoons sugar

1 tablespoon tomato paste

1/4 cup chopped fresh basil

3 cups chicken stock

1 tablespoon kosher salt

2 teaspoons black pepper

1/4 cup heavy cream

freshly grated parmesan for garnish

chopped fresh chives for garnish

Directions:

Heat the oil in a large pot over medium heat. Add the onions and carrots and sauté for about 10 minutes, until very tender, Add the garlic and cook for 1 minute. Add the tomatoes, sugar, tomato paste, basil, chicken stock, slat and pepper and stir well. Bring the soup to a boil, lower the heat and simmer uncovered for 30 -40 minutes until the tomatoes are very tender.

Add the cream to the soup and process it through a food mill into a bowl, discarding only the dry pulp that is left. Reheat the soup over low heat just until hot and serve with grated parmesan cheese and chopped chives.
