As I had mentioned earlier Chithranam's are very easy to prepare and tasty rice varieties often made in Tamil nadu cuisine.We prepare an array of such rice varieties.They come very handy for travels.rushed morning hours.They stay fresh and tasty for long time so they make perfect lunch box for kids and adults as well.I have already posted a recipe for tomato rice here,but that is more like a pulao with all different masala powder and spice powder.Today I am posting the recipe for the tomato rice that we usually prepare in our home.This is a fuss free recipe with minimum chopping and very few ingredients are used.The spicy tangy tomato rice is just perfect for monsoons along with some papad or any str fry.Please try n let me know
Tomato rice
Star ingredient:Tomatoes
Time:30 minutes
Serves:3
Ingredients:
1 1/4 cup basmati rice
3-4 tomatoes chopped fine
2 green chillies
1 small piece of ginger crushed
1 teaspoon urad dal
2 teaspoons peanuts
10-12 cashew nuts
1/2 turmeric powder
1/2 teaspoon asafoetida
1/2 teaspoon chilli powder
10-12 curry leaves
Sesame oil
Salt
Method:
1.Soak basmati rice for 15-20 minutes and pressure cook with 2 cups of water for up to 3 whistles.Once pressure is released spread it on a wide plate and allow to cool completely
2.In a wok,add little sesame oil and temper with mustard and urad dal.The add cashews,peanuts and saute till golden.Add green chillies,curry leaves,ginger,asafoetida and saute for 2 minutes.
3.Add the chopped tomatoes and mix well.Add turmeric powder,chilli powder,salt and stir.
4.Saute till tomatoes leave out oil and are completely cooked.You can add little water,cover and cook on low flame for 10 minutes.
5.Once the mixture is completely cooked,add the cooled rice and spread gently.Add 1 teaspoon sesame oil on the top and mix well
6.Serve with papads or stir fry
Notes:
1.Usually basmati rice is not used for any kind of chitranam.I just used as we like the flavor.
2.If you want to include onion saute it along with other temperings,omitting asafoetida
3.Use sesame oil for best flavor and taste.
4.Do not over ook rice,as it absorbs water from tomatoes as well.
