Today's post is on a reader's request.Sivakami (a reader of this blog) sent me an email asking for some easy basic breakfast recipes apart from idly/dosa, that takes less time to prepare as she is newbie cook.For those who are not aware,you can use this form to write to me for any clarifications/suggestions or if you wish to get the recipe for any specific vegetarian dishes.I shall be more than happy to try it out and post it for you :). Now to be back on track,here I shall be posting few easy n quick to prepare breakfast series to help out Sivakami and also others who are looking for the same.Here I am blogging about a very very tasty,filling and healthy breakfast which is loved by kids and adults equally-Vegetable grilled/toasted sandwich
When I was working for a software firm,I used to go to office very early like 7:30AM and this will be my breakfast everyday along with a steaming mug of coffee.Some days cooked vegetable kind and some days sandwich with raw veggies like cucumber and tomato-known as Bombay chutney sandwich,these made a very filling and satisfying breakfast.Now lets move to the recipe
Toasted/griiled vegetable sandwich
Star ingredients:cooked potato masala.Sandwich bread slices
Time:20+10 minutes (see notes)
Yield:5 sandwich
Ingredients:
10 bread slices (while or whole wheat)
2 large potatoes
1 onion
1 carrot (optional)
2 green chiliis
1 small piece of ginger crushed
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1/2 teaspoon garam masala powder
Salt
3 teaspoons softened butter
Method:
1.Wash,pressure cook,peel and mash the potatoes and carrots.Chop onion into fine pieces.Slit the green chillies and crush the ginger.
2.In a kadai,heat some oil and temper mustard,cumin,green chillies and ginger.
3.Add the cut onion and saute till golden
4.Add the mashed vegetables and saute for 10 minutes.
5.Add salt,garam masala and cook till raw smell of garam masala goes off. Remove from flame and keep aside
To make sandwich:
1.Take two slices of bread and apply butter on one side.Spread some masala to one bread slice on close with other slice (butter side inwards)
2.Toast on stove top till golden brown or grill it in a sandwich maker till golden.
Notes:
1.Adding carrots is optional,it gives a slight sweet taste which everyone may not like.
2.You can even add pav bahji masala,pepper powder,some grated cheese or anything to our fancy to this basic veg sandwich recipe
Time saving tips:
1.You can cook and mash the vegetables the previous day and refrigerate.So that the next day you can cook your breakfast in oven or griller while your lunch is getting done on stove top.
2.Extensive use of pressure cooker saves a lot of time in the morning.Keep whatever needs to be boiled in the cooker,and use the cooking and pressure releasing time to chop other veggies,grind masalas etc.
3.A little bit of planning like soaking and cutting vegetables that take a long time the previous night can really make mornings stress free.
4.Opt for wholesome healthy breakfast like idly,poha,kichadi.These are very healthy and takes very less time also.
