Thursday Dinner

I am a pasta lover. I always overeat if I make a pasta meal. As you know white pasta contains a lot of carbs without really adding to your health. If you are trying to lose weight you need to cut down on the carbs. If you make pasta from zucchini you can still enjoy the feeling of having a satisfying pasta meal which even tastes better than the real thing and is so much better for your health.

So here is a low carb, high in protein favorite, of mine: zoodles (zucchini pasta) with chicken in cream sauce topped with parmesan. Best of all: it's so easy and quick to make : )

Thursday dinner
  1. Peel 1-2 zucchinis (using a spiral slicer or a peeler).
  2. Slice the chicken (I used fillets) into smaller pieces.
  3. Add salt and pepper.
  4. Heat olive oil or coconut oil (neutral in flavor) and fry the chicken.
  5. Add cream and spinach leaves (I used frozen) and fresh or frozen basil.
  6. Add the zoodles and cook for a few minutes.
  7. Sprinkle parmesan (optional) on top before serving.Bon apetite!
