I love to make this appetizer when I have a few bits of cheese sitting in the fridge.
I know that cheese balls or logs are so old fashioned. They have been around so long because the are good to eat, easy to make and in my case uses up most of the cheese that I have leftover in my fridge. The cheeses I put in mine don't have to be the same as the cheeses you put in yours. I would however recommend using the cream cheese. It does hold it together, but the other cheeses can be mixed and matched depending on your taste. I thought about adding blue cheese but I am not really a fan. However, brie, or cheddar would be fantastic mixed into this.
Three Cheese Log
Ingredients:
1 package cream cheese softened
1 tablespoon Parmesan rinds
4 ounces goat cheese
1/4 cup chopped pecans
