For some reason or another, every time I step foot into my bed, my brain won’t shut down. I lay there, thinking about all sh*t I have to do, along with every other annoying thought that comes to my head. As much as it sucks and keeps me up far too late, I always feel that it is kind of when I do my best thinking, and I always wake up with a to-do list already embedded into my brain.

While lying in my bed last night, I realized I haven’t shared anything related to GF as of late. Sorry ’bout it, but I do have good reason. I was on a 3 week cleanse (more info about it here) and I basically ate fruits & veggies all day every day. I seriously doubt you guys care about the different ways I ate a tomato. I don’t blame you, it got real old towards the end.

Now that my system was nice and purified, I didn’t want to go back to eating sh*t. I sat with my amaze nutritionist and had her help me out with some of my vices. First and foremost, we had to find a way I could eat my fave food ever- burritos.

Before the cleanse, I would cheat the GF life once in a while and indulge in a burrito from the hole-in-the wall mexi place right by house (if only it wasn’t so close to me). I always regretted it after, yet sometimes you just can’t fight the craving.

Back to the point. My nutritionist and I joined forces, and found the perfect ingredients for a freaking amazing, gluten free, healthy burrito. It is is seriously the bomb. Just as tasty as the “real deal”… if not more?!

Ingredients (all from TJs):

+ Fat-free refried beans
+ Salsa
+ Brown rice
+ 1/2 avo
+ Brown rice GF tortillas
+ Soy mexican cheese blend
+ Fage greek yogurt

Step 1: Prep

+ Put the beans in a bowl with some cheese sprinkled on top.
Put the brown rice (which will need to be cooked first) in a bowl and add some salsa. You will seriously be shocked when you see how much it tastes like authentic mexican rise.
+ Stir em up, microwave together for 2 minutes. Mix when finished.

Step 2: The Tortilla

+ Microwave this bad boy for 30 seconds so it’s nice and soft. While waiting, slice up your avo.

Step 3: Fill ‘Er Up

+ Add all your ingredients to your tortilla.
+ I don’t know if it’s weird, but I used to love sour cream in my burrito. Instead use greek yogurt, tastes the same & is better for ya.

+ BOOM! The best burrito ever, plus it won’t make you gain 5 lbs in one sitting.
+ For some extra flave, grab some Sriracha. That stuff is my jammm… seriously goes on everythang.
