Texas Caviar

Texas Caviar

Don't let the name of this delicious snack turn you off. Known as "Texas crack" in my household, it doesn't contain fish and makes a perfect summer/fall/cookout treat. Just don't blame me when you eat all of it!
Texas Caviar
  • 1 can shoepeg corn
  • 1 can mexican corn
  • 1 can pinto beans
  • 1 can black-eyed peas
  • 1 cup green peppers, chopped
  • 1 cup celery, chopped
  • 1 small red onion, chopped
  • 3/4 cup apple cider vinegar
  • 1/2 cup sugar
  • 1/4 cup oil

1. Drain and rinse corn, beans, and black-eyed peas and mix together
2. Add the pepper, celery, and onion
3. Cook together the vinegar, sugar, and oil so that the sugar is melted.
4. Cool completely, pour over salsa and cool for 2+ hours.

Excellent with chips, on salads and eaten with a spoon, Texas Caviar is the perfect snack!
