Tailgating – BBQ Burritos

Are you ready for some football?!?! This Saturday begins the college season for us and while we are still frantically moving the kids in with us and rearranging the entire house, all will stop for a few hours on Saturday to watch the University of Oklahoma play a game of football. Half the kids are already here so we hope the others will come – and I will be in charge of food. I make spicy for several but there are those who really do not care for hot food so I came up with something different. I wanted to try it several different ways before I posted it and you are going to be surprised at how versatile this dish is!

Back to the recipe. Here’s what you are going to need:

BBQ chicken – homemade, frozen chicken wings, or grocery-store bought. I used homemade this time but any will work.

2 Cups shredded cheese – your favorite kind. I would love Mozzarella, but I had Mexican Blend so I used that.

10 flour tortillas.

That’s it.

Directions:

Set up your steamer because they are ALWAYS better steamed!

Shred up your chicken or pull it off the bone.

Put a little on the tortilla followed by some shredded cheese like this:

Roll it up like this:

Wrap foil around and steam in a steamer like this for 30 minutes.

The greatest thing about these? You can do everything and store in the fridge the day before and then steam the day of the event.

Or, you can go all the way to the wrap in foil step and then throw them in a Ziploc bag and place in the freezer until the day of event. That morning take them out of freezer and let them thaw and then steam for 30 minutes. Perfect! I know because I did it just to make sure. How easy is that? You can make these on Sunday evening for a Thursday night varsity game, Friday night High School game, Saturday college or Sunday Pro game. Seriously – you gotta’ try it!
