Sushi is fish right?Nope, not for vegetarians,its not.No vegetarians in my house here ,but the clamouring for something different or "कुछ हटके " never ends.Sushi Sandwiches-Vegetarian and Imaginative
I wonder if the same story is played in every ones house?With all the noise about the processed meat and additives and preservatives etc, I try to avoid buying salami and hams and stuff. So I try to incorporate some greens into sweet childs meals.Beets are great for you but the leaves are even better. and so are things like pistachios and cheese slices and butter and mayonaise and anything else you can pull out of your fridge.Sushi Sandwiches-Vegetarian and Imaginative
All this needs is fresh bread, fresh greens etc abd some imagination.
For the
Sushi Sandwiches
you need 
A few slices fresh whole wheat or white breadMayonnaise or soft butter or peanut buttercheese slicesgreens-Beet leaves or lettuce or fresh baby spinachfried onions, pistachios, cottage cheese, mango chutney, tomato chutney...A sharp knife and al foil
Remove the crust from the slice of bread and roll them like you would rotis or tortillas with a rolling pin.If the bread is not soft and fresh, it will break...mine did.Sushi Sandwiches-Vegetarian and Imaginative
Slather some butter or mayonnaise on the bread ,the high fat content acts to make the bread water proof and acts as glue.Sushi Sandwiches-Vegetarian and Imaginative
Layer the greens,remember vitamins and minerals are absorbed best in the presence of fats-thus butter. These dont really need seasoning-I never wanted the veggies to bleed an make the bread soggy. Salt does that to veggies. Any extra seasoning can be added to the dip sauce. The rolled out and layered bread must be rolled along the length. My bread was not too soft so I wrapped the roll in al foil and chilled it in the fridge.Sushi Sandwiches-Vegetarian and Imaginative
Sweet Child never needed any dipping sauce and he never realized that the sandwiches have beetroot leaves.Can anything be better than that?These rolls -Sushi Sandwiches looked pretty and are ready to be served on a prettier platter as an accompaniment to tea or coffee or with just about anything.

I tried these fillings ,maybe next time cucumber or shredded carrots ir thinly sliced pumpkin or maybe shredded chicken or boiled eggs or mashed potatoes or cottage cheese, did I mention baby spinach leaves ???Its going to be an exercise in imagination.
