Sunday Morning Eggs!!

WhileI was driving back from the barn where we keep out horse, I noticed that ayoung boy had set up a stand and was selling something. As I approached Ithought it was a bit chilly for lemonade so early in the morning, but as I gotcloser I saw he was selling EGGS! As I pulled up I could see a big smile on hisface so now I new I am buying more eggs than I need!  Yes, I bought twocartons. He told me that they were organic, free range and he had washed themalready too! I took his word for it and headed home.Uponopening the box of eggs I was immediately taken with the lovely array of colors!Of course I thought what great paint colors these would be! Then I thought, Iwant a chicken coop!  I have been toying with the idea for a year now andI finally have my husband warming up to the thought. Besides, we live in a 200yearold farmhouse titled "Holland Brook Farm" since the 1780’s! So, I have gathered up several ideas for coops and thought if BrookeGianetti (Velvet and Linen) can raise chickens with her hectic lifestyle thenit should be a no problem for me! At least I hope!! I am inspired and will comeup plans in the next few weeks and will be happy to share the project oncecompeted, but for now I need to find the one I love!

Preheat oven to 325. Beat egg with egg yolks with whisk until light and fluffy add maple syrup and whisk again.
Heat Cream until it simmers then add brandy. SLOWLY temper the cream with  he eggs , very slowly whisk in ! We don want scramble eggs! When combines pour mixture into a small pie dish or ramekins and place in a baking pan with hot water that fills half way up the side(/Water Bath). Bake for 40 minutes and cool, you may then sprinkle maple sugar or castor sugar on top , and if you are lucky to have a  torch , lightly brown the sugar on top for a crispy finish!! Enjoy!
