Strawberry Chocolate Poke Cake

Do you like poke cakes as much as my family? They all do and this is a new creation of mine that I’ll be serving on Valentine’s Day – and you can too! It’s easy and does not take any special skill, that’s for sure.  This cake is Strawberry Chocolate Almond Coconut Poke Cake to be exact.

This is all you will need:

1 box strawberry cake mix and all the ingredients needed on the back
2 boxes Jell-O Almond Joy chocolate like this:

Or 1 regular instant Jell-O Chocolate if you don’t like Almond Joy pudding!
1 tub of Cool Whip

Yep – that’s it. Then do this:

After the cake is baked, let it cool completely.
Take a wooden spoon and poke holes all over it.
Mix up the pudding as directed on the back and let sit 5 minutes.
Spread the pudding on top and really get that pudding down into the holes – as you can see I didn’t do such a great job.
Then spread Cool Whip on top and place in the fridge for a couple of hours.
Then you can eat it up just like PacMan!!!
