I love making this super easy dessert that is perfect for any occasion. You will only need some time prepping the ingredients, but most of it really is assembly . Fridge cakes (or ref cakes as most of us call it) are practical alternative to the traditional cake as it needs no oven, very little or no experience in baking, very versatile (you can make thousands of fridge cake flavors) and patience (as we need to put in the fridge to set). I'm making this one extra special by adding ice cream!
For this particular recipe, you will need the following:1. A pack or two of chocolate- or honey-flavored graham crackers 2. A pack of double-stuffed Oreo cookies3. A teaspoon of instant coffee + a tablespoon of hot water to dilute the coffee4. 70% dark chocolate or any chocolate of your choice, mint-flavored chocolate would also be nice5. A small can of condensed milk6. Two cartons of all purpose cream 7. A pint of strawberry ice cream8. A tablespoon or so of honeyFirst, start by mixing the condensed milk, all-purpose cream, and the coffee mixture in a clean bowl. Stir until well blended. Get a square or rectangular shallow baking dish and place a little bit of this mixture just to cover the bottom of the dish.Next, layer your graham crackers to cover the base of the dish. Add another layer of your milk-cream-coffee mixture, approximately a quarter of an inch thick.Roughly break the Oreo cookies with your hands and distribute them evenly above your milk-creamer-coffee mixture. Add another layer of graham crackers to flatten the surface.Now add a layer of strawberry ice cream (yum!). Make sure it is not frozen by letting it sit on the counter for a few minutes so your ice cream is easier to spread.Repeat layering in the following order: Graham cracker, milk-cream-coffee mixture, Oreo cookies, another layer of graham crackers, and ice cream.In a separate small bowl, melt your chocolate in the microwave for 5-second intervals until totally melted. Add a tablespoon or so of honey to add shine to your chocolate.Pour the mixture over your layers and top with pieces of Oreo cookies or even more special, fresh strawberries! Place in the fridge to chill and the waiting game begins ;)Usually this will set for about an hour or so (if you put it inside the freezer), but it is best to do this ahead of time then chill overnight.
