An eggless cake made with yogurt and oil as a substitute to eggs and added little corn flour for extra raising and fluffiness.The recipe is so simple to make and you make the cake in your steamer or in idli maker too.Actually want to bake in pressure cooker,but i discard that and start to make the same using the steamer and this is little bit healthier side than baking.check the steamed custard powder cake and steamed chocolate cake recipe for more steamed cake recipes.

Usually red velvet cake is served with cream cheese frosting,here we take that as it is as am not fond of cream based cakes.Red velvet cake is one of the best cakes for the holidays and i have one more steamed version of cake in draft,will post that soon.Used brown sugar in the recipe instead normal sugar and you have to cream both brown sugar and yogurt well to avoid sinking cakes,otherwise your cakes will become more dense than fluffier side.Also the recipe has half all purpose flour and half corn flour in the recipe to give extra raising to the cake.

red velvet cake made in bundt pans in a steamer

Ingredients

  • all purpose flour - 1/2 cup
  • corn flour - 1/4 cup
  • brown sugar - 1/2 cup
  • yogurt - 1/4 cup
  • oil - 2 tablespoons
  • milk - if needed
  • cooking soda - 1/8 teaspoon
  • vanilla essence - 2 drops
  • cocoa powder - 2 tablespoons
  • red food color - 1 drop(gel based color)
Instructions
  1. Sieve all purpose flour,corn flour,cocoa powder and cooking soda in a bowl.
  2. Whisk yogurt,brown sugar and oil until all combined well.Add vanilla essence and whisk it well.
  3. Add the red food color to the mixture and mix it well.Combine them with the sieved mixture and whisk it again without any lumps.
  4. Make sure there are no lumps.Add milk if the mixture looks too thick.
  5. Grease the baking dish with oil and prepare the steamer with enough water.
  6. Pour the batter to the baking dish and level it evenly.Place the baking dish in the steamer and steam cook for about 20 minutes in low flame.
  7. After 20 minutes check the cake with a toothpick,if it comes out clean,remove from steamer and serve.
